Ally here, Creative Director at Barre Body. When I’m not making Barre Body look extra gorgeous, I’m craving chocolate cookies. I’m not overly skilled in the kitchen, so these no fuss, super quick cookies are super easy, and honestly (and unbiasedly), the most delicious cookies I’ve ever eaten. Better yet, my friends who make gourmet cakes, request I bring these to their birthdays, which makes me feel extra great at baking.

What you’ll need:

  • 250g salted butter
  • 1 3/4 cups of all purpose flour
  • 3/4 cup of brown sugar
  • 1/4 cup of white sugar
  • Tablespoon of rice malt syrup (honey or golden syrup work too)
  • Teaspoon of vanilla extract
  • Teaspoon of baking soda
  • Pinch of salt
  • 200g baking dark chocolate chips/block chopped up
  • 1 egg


1. Preheat your oven to 175 degrees (celcius, if you need fahrenheit there’s google for that)

2. Put the butter in the microwave for about 30 seconds so it’s half melted

3. Combine the half melted butter, brown and white sugar in a bowl. If you have a stand mixer, you can use that fancy thing. If not, you can also use a wooden spoon. Mix until it’s combined.

4. Crack the egg and pop it in the mix. Also add the vanilla extract and rice malt syrup. Combine! It should be runny and a gorgeous caramel colour.

5. Pop in the pinch of salt and baking soda, then slowly start to fold (mix, really, I just feel fancy saying fold) into the wet mixture. It’ll form a dough. You may not need the full 1 3/4 cups, I usually find myself using about 1 1/2 cups.

6. Fun part! Add the chocolate! If you’re not using a mixer, use your hands here! If you are, well, you can keep mixing.

7. Line a tray with baking paper and make balls of dough (whatever size you’re feeling, no judgement here) and press down on them slightly to flatten them once they hit the pan.

8. Once all of your balls of delicious dough are on the tray, pop them in the oven for 13-15 minutes. I like mine chewy, so I always err on the shorter side. They’ll be ready when they’re a golden brown and your house smells like deliciousness.

9. Wait at least a minute before you devour them all. You’ll burn your mouth.
